Pretty much any tire can be installed tubeless, but generally non tubeless spec (cheap) tyres tend to be quite porous on the side walls and therefore need a lot more fluid and time installing to make them airtight.
Assuming you have a Shimano XT m8000 setup, I believe this is standard on your bike, then chances are you can get what you need here,

Not sure why you would want to really, can't see the benefit of quick release over the better security afforded by the OEM stealth. Are you getting many punctures ?
The Commencal will certainly not disappoint, build quality and the specification you get for the price is very hard to beat. Shimano's E8000 motor package really is a sweet bit of kit, highly recommended.

The Gap Kernow is referring to is indeed 22mm on Ex1 but I believe it's 15mm on the 11 speeds, but most importantly it has to be set at your SAG position. So you will need help or let the air out of your shock to reach the correct position before setting. (Sram specific)

Glad to hear your chain is doing well, the fact that its a 10 speed chain helps, being a tad beefier than an 11 speed and your local riding conditions also seem to be less abrasive perhaps, but I would seriously recommend you keep an eye on the wear as it can very quickly change...
