The 11-speed SLX cassette and SRAM PC1110 chain are hard to beat for the price. If you don't need the range just get an 11-40 cassette instead of the 11-46 or whatever you have.
You won't have any benefits going 8-9 speeds over your current setup. As far as I know, there is no 8-9 speed rear...
Congrats, looks great in mango! :) The gripshift is a personal preference and nothing’s wrong with using whatever you like. Also, there is no other SRAM shifter which can upshift multiple gears at a time.
To me, the Levo looks overhyped/overpriced, and the issues with them raise the question of how much testing did Specialized do before they released it? Zip tieing flaps and putting sponges in holes for the premium price is kind of ridiculous... but maybe that's just me.

I’m running DMR Vault and Nukeproof Horizon pedals on two bikes they are both absolutely awesome, bomb proof and their rebuild kits are very cheap. Hard to tell which one is better if I had to give up one I would keep the Vault maybe it’s slightly more concave than the Nukeproof.

Yes, you can use any of those, Shimano levers and calipers can be mixed. You can keep the same hose too you just need the short banjo bolt for Zee and 8020 to connect the hose to the caliper. They are not coming with the caliper but with the hose or can be bought separately for ~2€.
I've made a pouch (padded with 1cm thick polyfoam beach mat) and put it in my 'non-ebike specific' Ergon or Deuter backpacks, they have back protector. I'm only carrying spare on long, touring type of rides (~5 times a year) and I have other stuff in the backpack too so it's not bouncing around...
I don’t... Eco on asphalt and Trail off-road. I like the ‘natural’ feel. Boost is too aggressive on the E8000 it’s mostly reserved for friends when they want to try the bike. :) Sometimes when I get completely exhausted on a ride I use Boost on the way home. :)
I would happily choose the M8020. My enduro came with Guide RS and I gave them a chance but the plunger stuck in the lever in warm weather, not enough power on long mountain descents, fiddly lever reach adjustment and I didn't like the lever shape either. Changed it to Saints and no more...

For 2019 they changed the rocker link bearings but the same pullers work with them because their ID's are the same 10/15/20mm as the 2018 models.

I have friends who prefer the 'stealth' look because they feel less embarrassed and they think others will not see that they are riding an ebike... :LOL:
