Also, of course it’d be easy to throw money at this build and buy branded (recognised) stuff. But part of the challenge with this project is finding cheap, but legit, and safe components that the average person (non hardcore MTber) can ride safely and have fun on ?

Anything better bang for buck than this Deore 12 speed ? Had a look but think this might be the best (and in stock)

M500 seems to be weak - only 12 amps on 48V but M600 is marked as 500W and its not EU compliant.

I am curious, what regulations about ebikes are in UK if you want to legitelly ride on bike lanes?

I am curious how the modified m600S engine, which is mounted in the Elife X and has EU approvals, works​

actually that's not true.. the cassette bent teeth first ride, so I am using a shimano 10sp cassette, but otherwise the shifter and derailleur have been quite good.
I've used the Microshift 9 and 10 speed cassettes with BBSHD, M600 and M500 without any problems

That's ok, he's in England which isn't in the EU anyway :)
Watch out there:
UK law was harmonised with the EU before brexit and on the Ebike front hasn't had significant changes.

This means the m600 is still either a L1e-A or L1e-B vehicle (speedbike or speedpedelec), which require registration, insurance etc and are often not allowed on trails.
