If you can afford it, go for the carbon frame. It is easier to lift over gates and onto your roof or towbar rack. :)
PS: I haven't ridden an alloy version of either of my carbon framed bikes, but I have no issues with noise (or vibration) transmission. Overheating has never been a problem.

Mountain bike are meant to go over rough surfaces and vibration is a consequence of that. For the dealer to blame knobbly tyres for the vibration is absolute bollocks! All my mtbs have had knobbly tyres. Something is loose on your bike.

By raising the saddle, you have changed the angle of your hands to the grips. Try adjusting the angle of the grips so that your hands go back to the same angle they used to be. :)

My first mtb was 600 and I noticed the difference when moving to 620mm. Now I'm at 770mm and I cannot imagine going back to 600mm. It would feel dangerous.

I can 100% recommend the Continental Trail King, but make sure that you get the ones with the "Black Chilli Compound". Extra life, extra grip, no extra rolling resistance. Their new range of three tyres one of which is called Kryptotal (can't remember the other two) are also reputed to be good...
I'm glad that I read to the end, I was about to recommend giving Ergon GP1 grips a try. I've been using them for years. Having used them you will know that they need to be flatter than you would think and that each hand may need a slightly different angle.
I am certain that what caused my bike rack grip to lose its hold on the bike was the tapered top tube it was gripping. The vibration of the moving car allowed the grip to move down to a narrower cross section where the top tube could slip out. That is why I use a strap as a just in case, belt...

On my Shimano, while showing the trip mileage, I hold down the switch that moves from one display to the next. Hold for a few seconds and the trip mileage goes to zero. That wasn't in the instructions either. That might work!
