Inserts are about a fiver and every time I involuntarily dismounted , my knee would catch the Garmin and break the insert ?
After the third one broke , ( yes I have been known to disembark more than @Zimmerframe ) I sourced some inserts from China...

There is the " Cascade link " it doesn't raise the Bottom bracket height because it's the same eye to eye length
Apparently it offers ,amongst other things , more mid stroke support and is less inclined to blow through the travel in the rough stuff , so bike sits higher and pedals stay further...
160 mm fork , flip chip high setting and shorter cranks are the obvious as already mentioned
Thinner pedals make a difference too , often overlooked but makes sense when you think about it , you mentioned yours are big , does that mean thick as well as wide ?

That's a tough call , what do the numbers add up too if you sold your current bike and put the proceeds plus your £1100 towards a new bike which has a 700w already ?
Also is the potential new bike better specced ?
I've got a 19 Levo with 700w battery and usually get about 50km riding mainly in trail with little bit of boost when req , switching back to trail asap
I tried my mates 500w for several rides as a comparison , rode the same routes trying to replicate my normal riding style
Got on average 38km...
I've been looking at them , might have to suck it up and take a chance
Shame there's not a try before you buy option
Don't mind paying the premium price if it works for me , but parking it on my garage shelf is not a desirable option after spending that sort of cash ?

Yes , Ideally I could try my mates saddles but they are all too tight to buy any thing decent.

I have a Levo 19 expert and it comes with a Spesh Phenom saddle
I've been using it for almost two years and have found by it to be pretty good . Done some longish rides , around 3hrs / 50 km , and only had occasional mild discomfort on it

Definitely worth a visit
Loads of forestry work been going on and some of the trails are a bit trashed as a result with loads of debris left where it dropped but still plenty to ride
