I use them as a base and adjust based on ride feel and how much travel I'm using. My personal experience is that Fox (38 for me) seem to work better with a touch less sag than Rockshox. For my riding at least.

I run RSCs with 220mm rotors on the ebike. They work brilliantly but need bled a bit more often than I would like. I have MT5 with 223mm rotors on my other bike which are fantastic. I am sure they would be just as good on the ebike.
