E1900 is okay and can be used. A bit stronger would be the H1900.

The webpage is wrong or better said, confusing. EP8 is also short for the new EP801. The old EP800 is not compatible. This information is direct from Shimano. I asked them.

I switched the adapter. MT7 works perfect with MDR-P. At the moment, I'm using my winter tyre which has a SRAM Disk. Also fine. I don't like adapter with longer screws like the Magura. The Galfer has seperate screws.

If it is the 2023 model, you have the pressure relive valves, so no need to unscrew anything. Unfortunately, RS is greasing the Zeb (maybe also others) too much, which can end in a smaller negative chamber or even blocking the small holes between positive and negative. There is another thread...
