Yes absolutely although prices for mid range stuff is not coming down yet due to growing demand as most are now understanding what ebikes are really about.
But there are more and more entry level ebikes starting at lower price points (which don't seem very good VFM to me).
That's annoying. I am only 6ft on a XL too and it's spot on at 170mm. Have you removed the rubber grummet at the base of the post ? (if it was even fitted) - that gained me 15mm. If not, then perhaps a lower profile saddle.
Not really. I made one with an old bottle of Coke and 2 old valves. It inflates the rare tubeless tyres that don't come up with a track pump and a bit of fairy liquid.
Nothing messy about tubeless in my experience. The fact that you tried it first isn't conclusive. Or maybe it was conclusive to the fact that you were not very good at it, despite it being quite simple and not messy at all if done properly.

Something is amiss. I have now put 1500 miles on a 12 speed SLX chain/cassette that was OE on the Decoy and still not even on 0.50 wear. I am 90kgs and don't take much care when shifting. I assumed that ebikes would be harder on chains but so far, not particularly. Same with brake pads which...
I am not sure there is such a thing as a 2.8 29 Eddy Current.
Edit. Just realised there is. Must be recent as a couple of months ago it wasn't listed. I would try that, 30mm rim is no issue, the profile will still be nice, if not quite as optimised as on a 35mm.

IME EC are really good. Certainly never lost knobs despite the adverse terrain and my cavalier riding style. Far better than the DHF they replaced. In another league in fact.
I like the Eddy Current, despite being e specific. There is a deal for a pair on one of the German retailers site. It works out at less less than £80 delivered or so for the pair.
