They are all great bikes as you say and there is a danger of over analysing. I shortlisted the Cube, Orbea and Focus. Couldn't get a demo on the last 2 (or even a decent response from a dealer) so bought a Cube from my LBS so what is available will be a big consideration.

Not sure if this helps but I'm 5"8 and half with 30" inside leg and bought a medium which fits me fine. The bike I demo'ed was a large with the bars rolled back and seat forward that was absolutely fine so you certainly don't need anything smaller than a large and might even want to try an XL...
Yes. My recent purchase of a Cube HPC TM140 even prompted me to upgrade my Whyte to a Canyon Neuron and I'm loving them both. Because fitness is important to be I try and stick to using the EMTB after I've "earnt it" with a ride on the clockwork. Lets see if that lasts :)
Standup bash guard as I'd heard the only other option I'd seen (Rockguardz) were not great. Crazy money for £5 worth of tin but nice fit and looks like it will do the job. There is a great opportunity here for anyone with a small metalwork business!
I have the same bike so will check dimensions tomorrow morning.Not had any issues though but if there is a gap as you've measured, if it is then hitting, that suggests there is lateral movement?
Re your bash plate, I've just seen these, which look pretty sturdy if a little expensive
