You can get the Problem Solvers MisMatch adapter - always removed Avid/Sram brakes and put on decent Shimano stuff. Just need to figure out which one you need - iSpec 2 is possibly the one, but look it up on their site.

Personally, I prefer a wheel stand for washing.
I do hang my bike to lube chain, but I just slide the nose of the seat onto the bottom clamp which is enough to hold the wheel off the ground for lubing the chain. Wouldn't work on it that way though.

Steel Chain Ring and Cassettes are definitely the way to go with eMTB.
As far as chains go I would stay away from anything that has hollow pins or non solid side plates. From long experience on my Singlespeed hollow pins crush under load and side plates break on the flash lightweight chains.
