When you say 90% emtb and 10% turbo - yes, I think too noticeable. Honestly, you can try it out now. Just ride in a low powered mode for a few rides in a row and don't dial up more assistance. Stick it in ECO or Tour or whatever and stay there. See how you like it. Sounds boring AF right? :)...
I have the Orbea and I wouldn't rather it was longer reach. I've had long analog bikes and I honestly don't get the trend of going so long - but then my local trails are pretty tight I guess, relatively. I'd rather be able to get the bike down under me and my weight on the front wheel more...
Yeah I wish there was a flip chip on mine I even have a decent spare 27.5 wheel and would be fun to muck about with.
But if it could only be one or the other, I think I'd stay 29er tbh.

I really like the Stamps too. The Oneup is slightly thinner so I prefer those - but does it matter? Meh, no not really.

I think if you want to access the full support more easily in Tour+, my advice would be slower cadence (like 60/70) - thus using bit higher gear. I can really conserve energy and make the bike do the work doing that. It seems it just wants to see pressure on the pedals before it gives the beans...
No I think the overrun of eMtb is much lessened, and it also doesn't spike a chunk of power as soon as you pressure the pedals (hence it's not quite as good for getting started again on steep stuff). I personally miss that overrun/spike - I'd rather it was there. There's places in between...
