I did the 5 peaks yesterday afternoon and finished off with the descent from Allermuir, was quite a big ride and needed two batteries.

Can you buy these saddles direct from Canyon, had a look on their site but couldn't see them listed but sure I read someone on here bought one for their non Canyon bike?
The 15.5 mph limit is too low, 20mph as suggested would work I reckon. My bike is unrestricted but rarely spend a lot of time above 20mph.
I commute on cycle paths and being much above 20 when there is dog walkers, or my personal favourite runners with headphones on makes avoiding them tricky...
I am 6'1" (and a bit) and went for a Large in the AC XT. The Large has almost the same reach as an XL Kenovo. That being said an XL prob would have been fine as well but it is already quite a long bike so I stuck with the large.
I bought this bikes big brother, the AC XT with 180mm travel up front. Beautifully made bike, mine came with full Fox Factory suspension.

I have a 2015/15 Lapierre Overvolt SX800. Been a great bike for me. Tweaks cycles have the Lapierre AM727 for 4.6k this a great spec and if you wanted to get equivalent in a Levo you would need to spend £3k more.
You can buy a spare battery for the Lapierre for around £500, you will need one...
Same for me, I took a similar path to you, MTB/DH then moved to Motos. EMtbs brought me back to the sport.
If lived in the Alps with lift served riding I would have a standard DH bike and an eMTB for longer rides in the high alpine linking hut to hut trips.
In Scotland, eMTB only for me :)
I have experience carrying Avalanche Airbags when I go skiing. EasyJet allow me to carry a small canister of compressed air (allowed in IATA regulation) that inflates my Avi Bag. However, not all ground crew are aware of this and I have so much hassle and problems with different interpretations...

Read your review, how easy is the battery to change over. I have ordered the AC XT of but have a slight concern about the ease of changing the battery over. I carry a spare battery and on current bike it takes 30 seconds to swap over,
I have a Lapierre SX800 Overvolt, 2015/16 bike which is pretty good. This has longer reach and shorter chain stays so should be fun.
