I routinely ride my SC Heckler with it turned off in S Arizona. I don't do long climbs without battery anymore but I still ride my ebike like I did my hardtail.

You can still run the earlier version on your PC. I have both versions on my laptop. I agree that backwards compatibility for their hardware should exist. I understand changes in different software versions but I don't know what their reasoning would be for making the diagnostic hardware...
That was my experience trying to do firmware upgrades via Bluetooth. Had to have LBS restore firmware on one component. Bought a SM-PCE02 PC interface box and no more problems.
The adhesive on Gorilla tape is pretty aggressive. I would be a little concerned about it lifting paint or decals when removed. One thing that will be a HUGE pain in the butt is the adhesive residue left on the bike if you remove or replace it. The 3M tape and similar products can be removed...
I might be wrong but I think there is only one version that dealers and bike owners can download. The most current version is called etube professional. The Shimano website talks about this version as the same as dealers.

Changing out the cycle computer display isnt a big job necessarily. Depends alot on how accessible your wiring is and locations of any junctions. One issue that will come up is Shimano has used about 3 different cable sizes in their systems so you may need adaptors to go from your current setup...
It doesn't look like the e5000 has Bluetooth or wireless capability according to Shimano. I have the ec7000 computer on my bike and it does have wireless capability. You could also use the ew-en100 junction for Bluetooth.
