Maybe slightly of topic, but to be honnest this "big brother is watching you" is one of the reasons I never use Mission Control. Once you install the app you are forced to give all kind of permissions about data sharing and if you refuse to do so, you simply can't use Specialized's own app...
I would like to answer your question but I have the 2019 version so I didn’t explore the firmware development of the 2018 in detail.
I think there is another thread about the differences where I think to remember the newer the better.

Speed limit hack only isn't possible for the 2019 Levo with firmware version 2.025 or newer.
Speed of the 2018 Levo with the latest firmware you can still modify.

If I am right you have a 2018 Levo. With this bike you can update the firmware to the newest version without being afraid you will loose the ability to adjust the maximum speed.
I understood you had the phone in your pocket. In that case IOS version works well too. However when you would like to use the maps, GPX routes and continuous screen (handle mount) I would recommend to buy a BV6000 and the Android version. I have a iphone myself too. I first tried the BLEvo IOS...

Then check chapter 6 (page 12) and download the openandromaps and save them on the BV6000. You only need to do this once. After that you do not need to download any tiles anymore. You can later select different map...

Not only select the BLEvo app but also the bluetooth services:
you have to disable battery optimization for every bluetooth service (Bluetooth MIDI service, BT Tool, Bluetooth sharing) and for every app that will use bluetooth to transmit data
