In their reviews www.emtb-news.de includes a test with max assist until the battery is completely drained.
They didn't have the Sam2 but there is the Bold2 with the same battery. To compare with others with 500Wh battery.
What is your budget? Maybe there are alternatives with bigger batteries. You're looking for a hardtail?
As for the the distance it could be anything between 25 to 70 km depending on the terrain, the assist mode and your participation.
If you go until everything is completely worn it will be much more than this.
If you really want to go to the max, you should rotate 2 or 3 chains every couple hundreds of km.
It's the first version, with a Reverb post but I added the Bluto later. Apart from this and the racks it's the same bike. I have JJ 4.8 year round on it but now it's not my main bike.

I have the "civil" version of your bike, the Lebowske. I'm jealous of your snow...
I never had the "chance" to ride below -15°C but I don't usually go out for more than 2 hours so the battery is ok even in the cold.
Of course, with a hub motor it's already built-in.
And it's nice to regulate the speed downhill, but far from a "real" braking which need to deal with much more energy.
I don't see regenerative brakes coming as It must be added to the current components and not a replacement.
There is definitely a small market of new e-bikes commuters but as stated the weather is a big issue.
With a Shimano motor I would definitely upgrade to a Di2. It will integrate perfectly.
From a cost point of view, without front derailleur the expense is not that pertinent... But again with a Shimano motor I would do it.
