I weigh in about the same, switched to fabric scoop shallow from a wtb volt. Sometimes a supportive saddle that fits is better than an over cushioned one.
The volt was fine, but I needed a shorter stack height as seat tube was a bit too long. I believe the scoop is about 10mm shorter than the...
First time using eco mode for an extended time on a flat gravel path and this happens:

Go large, if the reach is too much, go for a 40mm stem.
You won't notice a weight difference between a M and L.
At 6'1", I was on the fence between L and XL due to the seat tube length. I got lucky that I fit with the 150mm dropper. Now the XL comes with a 175, which would not work for me.
I'd go with whisky as they are fat bike specific and have the proper width.

Second choice would be gorilla tape. A favorite by many for years.

Looks good, but how's the handling? Should be a beast downhill, but maybe a handful on single track.
27 mm to 38 mm rise bars coupled with 180 mm to 200 mm forks equals 31 mm rise in bar height and a degree slacker head angle to about 64.
I've been using stans for years, but there are better choices now available. I may try finishline as I like their dry lube and it is not supposed to dry up like stans.
Decent spec for the discounted price, besides the brakes. Looks like dated geo with a super steep 68° head angle. Could slacken it out with a 170mm air shaft for cheap. No reach numbers to be found, probably really cramped.

In the states, at least on the east coast, many frown on riding wet trails due to erosion. I stick to trails that drain quickly and avoid swampy areas. That said, some of my best rides were in the rain.
Of course you can reuse the hoses. Same brand, same DOT fluid. Although, you may need some extra stealthamajigs. I was able to shorten the cables on my code r bakes without needing to bleed.
You could put a new chain on and see if it slips or if there are gaps between the chain and cassette under tension.
I have the same mileage on a EX1 cassette, minimal wear, second chain, should be good for another few hundred miles.
Updated the motor firmware today, but had to use a sm-pce1 because I forgot my passkey. Walk mode works, boost overrun is gone, overall smoother in boost and trail.
