Shimano makes a specific 12sp chainring since chain is narrower.

Sounds like you are still an XL, although you might need a 150mm dropper. Unfortunately, the site does not state what's the dropper length. Reach is one of the most important specs as you don't want to be cramped.
Geo seems similar to the commencal meta, I fit perfectly on an XL at 6'1"...
At 5'10" you are at the overlap between M and L according to the size charts. A large would be better for stability and comfort. Any idea on stem length? The Giant website does not list. You could likely get a shorter stem. Have you ridden a bike with a 442 vs 460 reach?

Yes, hub end caps are available for about $25 and are easily replaceable. Specialized typically uses Roval wheels with DT Swiss internals and even specs Fox 36s on some models.
In general, it's best not to mix brands on drivetrain. Make sure you get a chain at the same time.
That said, what do you have now and why do you want to replace it?
