I just shift while it's walking. I'm usually up a few gears already because when I have to walk it's because of a very technical trail & I usually try to ride something technical in about 3rd gear.
I've been using a dropper post for quite a few years now, & would never go back. I was reluctant, but was convinced when my wife got one and all of a sudden she was keeping up with me instead of lagging behind on the downhills.
What is a pedal assist bike called in your country? Is pedelec a common term? I only ask because of this:

I think an interesting race is one which would tap out the battery and the rider. 3 or 4 hrs long so you'd have to economise with the assist. As far as cheating, for most bikes you can tell by inspection what battery they have. You could also have a calibrated charge after the race if there...
eco - medium. That works well for most of the time on most of my rides.
trail - medium. This works for most climbs which are too hard for eco (or I'm feeling tired or lazy).
boost - low. I find it hard to control on a technical climb if boost is on medium or high.

Anybody tried something larger than 2.6 on the rear? I'm thinking of trying a 2.8 Minion DHR, but guy at Commencal did not recommend it, he thought it might be too big.
