I use the komoot app on the phone for everything, can't justify an extra device when I've got a phone that does the job perfectly well. I use a fidlock case and mount on the top cap of the stem and if im doing a long ride I carry a small battery to recharge the phone.
Possibly something in the Giant Liv range to suit. For example the Embolden xs has a stand over of 710mm. Last time I was in the Giant store in shoreham on sea they had quite a few bikes from the Liv range in stock, worth a call if your interested, best dealer in the south east in my opinion

Also when you're ready to route the cable start from the outside at the head tube into the frame and down towards the motor, this way you should be able to run it past the battery latch without having to remove it. Much easier than doing it from the frame outwards ;).

So if the bike was sat on its wheels upright The cable route is above the motor and into the base of the seat tube. Frame route just follows in the existing clips with the rear brake line/controller etc that you can see when the battery is removed. Exit is via the right hand grommet...
Check out the E+ 3 dropper post thread. I would check with dealer on this one as the lower part of your seat post may affect the insert length, or could remove your existing seat post to check how much room you have and also if you can see the bottom of the frame to route the cable.

I went to 160 on my 2021 trance with a fox 36 factory and also went with high rise one up carbon bars. Didn’t really notice any difference in geometry but big step up in comfort over long distance from the rockshox 35 gold rl standard fork and ali bars.
As far as im aware there is no way to physically "disconnect" the motor as your riding, however you can turn off the assist completely by pressing the - button until no LED's are illuminated on the assist levels. The bike will still be powered on, showing battery level and recording data etc...
Nice upgrades, I put the fox factory dps shock on mine, big improvement over the standard unit, worth a look and cheaper. Although I like the look of the dpx2 it was overkill for my type of riding and I couldn’t fit a full size water bottle in if I fitted one.
