It isn't technical or even challenging (unless a gator chases you) but it is difficult to find a more scenic place than riding the doubletrack through the wetlands.
I used to ride a rail trail that was surfaced with "screenings", sort of sandpaper without the paper. I replaced the chain every year, the chainwheel and cassette every other year. Now I ride a trail that is hardpack with fine sand, here we go again. ;)

My other bike got a 10 mm higher stem about every few years, I suspect the SL will get new bars in a year or two. I got a new saddle the first week, the original was way too hard. The shock and fork are set to "plush".

I put a 0.25 mm shim on each side of the rotor then pull the brake lever as I tighten the caliper mounting bolts. This seems to align the caliper as closely as possible.

I ride mine around the neighborhood, it has 26" wheels and if I even *think* of turning it turns! ;) I can ride it until the temperature hits 90 degrees, after that the e-boost is awfully nice (12 mph of breeze for 6 mph of effort).

Since changing to 27.5" wheels my speed/distance is off by about 6% and the power starts rolling off at about 18 mph. Specialized removed the user's capability to adjust this but it seems an authorized dealer can do this. My LBS does not know how to do this but they are looking into it.

I did this for my Levo SL. Yes, the bottom bracket is lower but the only geometry change is the trail and it was only about 10 mm (10 %). I do not sense much difference except quicker steering (which was what I wanted). Oh, and the top speed is lower because the bike thinks it has larger...
I am in a similar situation, limited space to store bikes so I need a bike that can do it all. MTB can ride on pavement but road bikes are not much good on trails so MTB wins on versatility. I keep two sets of wheels for street/gravel and knobbies for my Levo SL and it works for whatever type...
