I also have one, and love it. But, I'd not use it for navigation when MTbiking. Simply because it's not convenient, you need to take your eyes off the road for too long to be able to squint at the tiny screen, which is at the same time not 100% in your line of sight. Not to mention long sleeves...

perhaps, you can ask your dealer whether he could add the second battery option? I know there is a retrofit kit, but (1) cables aren't included, (2) it requires a firmware change, (3) DYI would mean losing your warranty, and (4) I can't really ask a dealer to do it here, since they hate doing...
I believe thats not correct, it's not wheel diameter-dependant. With Bosch, you can also change the wheel diameter in settings (within certain range), but that doesn't change anything to the cutoff speed.
With 25+ avg, this would indicate that the motor would not (need to-) offer its support all the time, there would be stretches where your legs would be delivering the power. Ride 27kph and you'll end up with 100% battery after 100kms. Fun to know, but no lessons to be learned from it....

Surely, if you feel technically capable of soldering cells, you should be able to open the pack? Also, best take on some life insurance and check your fire policy. Soldering Li-ion cells, even uncharged, isn't without danger.

Have the same - or related issue - of the support fluctuating. Of course, in EMTB, it's supposed to fluctuate; but such support changes can also be found on lower settings (eco,...). On occasion, even Eco gives me a turbo-like surge every now and then, just for a second or so, and always when...
One thing missing from the Bosch eMTB mode, is a setting where you can tweak the ration between dynamic support and your own power input. Currently, in my very own opinion, it is overly supporting, I'd like to be able to put some more power in myself (and save battery) while keeping the dynamic...
