I have the new Merida eONE-SIXTY 975 with 750Wh battery and the tuning was done via remote support. I now can adjust max. speed of my bike with EMAX software on my smartphone to up to 50km/h and also reduce back to 25km/h at any time.

It seems like the only solution to speed up an EP801 is using the EMAX software. I have found some information of some bikers who have done this already here and here. This seems to be promising and I think I will give it a try too.
