Why would you need a bearing puller? Fork swap should be a very easy at home job. I wouldn't worry about damaging it at all, unless you are absolutely enormous.
You can open a quick link with a shoelace, but I would probably carry a mini quick link tool if I was doing an epic. Shoelace is last resort! There are lots of small quick link tools, mostly combined with tyre levers, or as above, in an EDC.
No experience of the Leatt one, but my partner wears a Fox Raceframe and finds it really comfortable. It's the smaller size, she is around 5ft 4 and 140lbs. She generally wears it over her jersey whenever we are doing any kind of uplifted riding.

Pretty pointless comparing different bikes based on wheel size. Geo will make more difference. Personally I think the difference between 27 and 29 is often vastly exaggerated. 29ers can be fun and playful, 27 can be dull and lifeless. There is way more at work that just the size of the wheels.
