That is a safe plan. 10 speeds are no problem SRAM or Shimano i have both. People sell their set to upgrade. 2 of my 3 bikes are on 11-42, my other is 10-42. We just need to use the proper front.

Trek and Specialized are often overpriced. With Shimano you might try Norco or with Yamaha you might look at Haibike. It looks like Yamaha has the best range. They were first with electric motor for bikes.
You can probably improve your gearing if you look for distance. My Haibike came with a 10 speeds cassette 11-36. Day 1 i switched to 11-42. I might go up a little slower but it avoids draining the battery when we climb. Check if your derailleur has room, mine was no problem.

I got an unsold Haibike HT 6.0 SDuro 2017. I could not be happier. It looks like Yamaha delivers more range for riding many hours with that 500 Wh and the 20 speeds is great. Generaly i hear and read positives about Haibike and Yamaha.
If i fallowed correctly your shifter and derailleur can handle that modification. You can look at the part # on your derailleur, look at the site of the manufacturer and find the capacity. If not sure ask your local bike shop. If need be you can take your batery off to lower the weight and ride...
It allways comes to $. Presently you can find a 10 speeds cassette 11-46 with a new chain added to your smaller front the difference will be big with a reasonable investment. Check the calculator with before and after modifications.
You have to do your part. This is pedal assist. Read it is easy to get used to a decent Ebike. If you like distance use your gears, do not allways use the maximum assist. I can ride over 4 hrs on my 500 Wh Yamaha.
