Shimano EP8 W/ E7000 display can go to E800 display?

Yes you can connect them, but the wiring will be different from your current wires! (Assuming you mean EM800 display and not E8000 display, since the E8000 display is not compatible with the EP8 motor)

The new EP8 motor and EM800 display use the new SD300 wires.

The E7000 and E8000 (motors & displays) use the older SD50 wires.

So currently if you have an EP8 motor and E7000 display you will find there is a connector somewhere in between the motor and display which converts from SD300 to SD50.

If you change your display to EM800, then you can remove the connector and SD50 wire, and directly connect the SD300 wire from the motor to the display (if it is long enough). Note that your assist mode switch probably uses the SD50 wire type - so you would need to work out how to connect that to the EM800 display. Either use the connector and a short SD300 wire, or change your assist mode switch to the new EP8 switch like this one: SW-EM800-L (shimano.com)
