Ortlieb quick-rack compatible paniers

I hope I'm in the right place and pretty much as the title says. I'm going to order the Ortlieb quick-rack for my Moustache for commuting, overnight stays etc, but which panniers are compatible? I'm completely new to bike luggage etc, so are there different mounting systems, do I have to use Ortlieb paniers etc? I probably won't be going over 10 kg total weight; laptop, change of clothes, charger, that kind of thing.
