hard tail recommendation

I would like to get an e mtn bike but I need to be able to use panniers and need enough battery to get me 40mi with about 3500feet of climbing. I weigh 230. We have a Spec and Trek dealer as well as REI but that's it for bike shops. The hardtail trek has a smaller battery or I'd have it already. Any thoughts on something comparable to a Rail with a hard tail that would allow panniers and a rack?

The Mondraker Prime RX is their large 750wh battery and rack cross-country bike.
PRIME RX

You may be better off with the regular Prime x 625wh and carry a 2nd battery.

I own a 2020 Mondraker Prime and they are very light, especially with a new wheelset.

Not sure about availability in the US though.

I have been looking at a Bianchi E-Omnia X Type, capable of dual battery setup, would definitely exceed the range you are looking for. I am trying to find some owners of the bike, seem far and few in between.
