Has anyone tried changing to 203mm rotors and keeping the stock sram brakes, is it possible and if so what is needed to do it

Tried front yesterday and no problem.
Visually, seems rear is OK also.

you did not need different size mount?

I have replaced both brake discs of 203 mm with Ashima brake discs of 180 mm. The Sram brakes are very difficult to adjust, they almost always drag therefore I prefer Shimano brakes, so much better then SRAM. But I got them all right and they brake very well. Not that it matters but it yields a weight gain of 260 grams.

Decreasing the diameter does also decrease braking power.

The caliper will need a different mount when fitting larger discs

Have you checked the wheel still goes on?

Increasing the diameter of the disc means the caliper needs to be further out. See here a 200mm rotor overlayed on a 180mm rotor and caliper mounting:
