They've sold you a 'complete' bike (clearly a breach of contract) & their own words are "we are not yet able to sell e-bikes in Canada". You have this in an email.
Both are their mistakes and not your's. You should not be trying to rectify them.

My experience with Shimano motors are X3.
My first Shimano was a e7000, I sold the bike to my Fiancée's son with 2500 faultless miles (it's still going strong).
My second & third bikes have e8000 motors.
