Zimmerframe voices an objection to the Shimano motor. Some will want a bigger battery. I can live with the 504WH battery because our group rides tend to be under 20-miles and my butt goes numb after 14.

Yes. Just a mild upgrade of speed into the high 20s would be fine.
I find that 20mph is useable most of the time, but on long, downslope connector trails/roads, I am in need of more speed when the non-eBikers in our group tend to take off.
The previous comments (and the ST Unlocker site) said that (IIRC) The E7000 display required a firmware downgrade to get the speed settings to work. The E8000 display did not.
I’ve ridden the Gen 4 on mostly on flat ground and can confirm the general behavior you saw. I have about 25-miles on the Gen3 with good climbs to test it. I found it adequate for my 210 pounds.

I test rode a medium and large 2020 Instinct last week.
The Medium was doable, bit a little cramped. I would go with a Large for me.
