I've run Icetech rotors on my (non eeb) fat bike for ages. Just replaced the rotors after a few years use in horrendous muddy conditions and the fatty isn't light. That said I think you're restricted to 200mm max size with Icetech. I really rate them though.

There are definitely options near you depending on frame size though according to Giant. E+2 size large in Stirling. Small, medium and X-Large all available in Pitlochry.

What size are you looking for? According to Giant's website Escape Route in Pitlochry have an E+1, size large in stock.

I find my Garmin frequently drops the satellite signal for a few seconds when I'm riding under heavy tree cover so I don't think it's particularly accurate. I can see these anomalies as straight lines on Strava (presumably where the Garmin has lost and regained the signal and straight lined...

My pet hate (and it's something that is definitely becoming more and more common) is people walking or running with headphones in/on so that they can't hear you coming even if you ring your bell or call out. It happens all the time on shared trails and cycle paths round here.
