Would the xtr gear shifter work with xt M8100 derailleur?

If they are the same gear count yup . I've been running the opposite on my old IBIS , ie XT shifter and XTR RD (both 12spd). You can even use Deore shifter with an XTR RD or vice-versa if you were that way inclined (or that was all that was available to buy)
