Just out of interest, what size canister would I need to inflate a 29inch 2.6 wide tyre to say 40psi which is the maximum allowed? I’ve never used one and don’t even know if they come in different sizes

They do come in different volumes but for that size tyre and that pressure you'll still need 2 no matter whether you use 16g, 20g or 25g canisters.
16g are usually most cost effective. especially if you buy in bulk

simply inflate with the valve at the side (3 or 9 O'clock position for us old codgers who can read an analogue watch) so all the sealant sits in the bottom of the tyre Steve and it's a non issue.
CO2 inflators actually specify this is how they should be used (if anyone actually read instructions)

Something worth knowing about CO2 in bicycle tyres - once you're home again, you should let it all out and re-inflate with air. CO2 deflates through the tyre far more easily than air, and so if left for a couple of days, the tyre will be flat unless you replace it. However they are indeed great for quick repairs to get you home. I use 16g for my road bikes and 25g for my MTB.
