I think the Hill start assist is an extended function of Walk Mode.

So, whilst you're on the bike, press the down arrow to enter walk mode.

Then, when you're ready to go press and hold the button as you would for walk mode, but start to pedal as you would normally. You then get the start assistance, release the button and you're off on your own with normal assistance.
