Front and Rear Sag Query

Just wanting to get an idea on what people are using on their emtb's?
I normally set up at around 30% front and rear on a normal bike.
Im 50 Y/O trail rider with a half wrecked body from too many mx injuries, so I err towards to the plush end of the spectrum esp. for the front.
My newly acquired bike came at 50% at the rear which actually felt ok. I put another 15 PSI in the shock to get the sag to around 35% and its a lot firmer but still fine. Fork feels great at 30%, the 36mm fork is exceptionally good.
.The bike is a '19 Merida 900e with fox suspension.
Thanks

Running around 25% sag rear and 20% in the front as it felt too soft on the move at 25%.

Set sag with all compression wound down to its softest setting then set the compression after.

Sag setting isn't intended to adjust softness/firmness, it's intended to adjust the part of the travel your suspension hangs out in when there are no forces on the suspension except for gravity. The softness or firmness can be adjusted by adding or removing volume spacers and then adjusting the pressures to achieve the correct sag.

When you say the front "felt too soft on the move" do you mean it felt too active while pedaling or that it bottomed too easily?
