At 400 miles my motor started creaking and clicking only when I pedal and only when powered on. I am not losing any power at this point. Should I ride it until it’s dead and then try to get a warranty replacement or stop riding? Does anyone know if I can buy a replacement motor somewhere and install it myself?

If your bike is in warranty, I'd ride until it's dead and then get a warranty replacement. If you are going to buy a motor, then buy the E8000, it is compatible with E7000 but more robust and less prone to fail.

Do you know where, or if it's even possible, to buy a new e8000, or even an e7000, these days?
In Europe it is possible to buy online from several source, but ordering from USA may be expensive. Try to find it oline or ask in a Shimano Dealer:
