Difference between power modes 60 NM 80 NM?

I have a 2020 Haibike Full Seven 2.0. The bike has really taken a beating and while I like it I am ready to switch up. I am into technical climbs and rarely go out for more than an hour or two. I live in Gloucester MA USA and the climbing / rock trails around here are great. I have two questions with regards to the power modes and NM on my Haibike (500 W battery). I presume that my top power mode (labelled as High on my controller) is 80 NM?
Question 1. Would this then mean that the next mode down (standard) would be 60 NM?
I don't think that I need to carry a big battery around for my one to two hour rides (360 or 430 W would be great) but for a guy in his late 60's I really like that extra bit of power for a difficult rock climb. Generally I ride around in standard or eco mode and then switch into high for a particularly challenging rock or climb.
Question 2. I have read that some of the new e bikes will give you a 12 second boost, which would work for me in most cases - is this boost 80NM or is it just the 60 NM advertised max for that bike?
If my standard mode is equivalent to 60NM then I at least have some idea what it will be like if I switch up to a lighter 60 NM max ebike. If I can I want to demo a few different power bikes but this information will get me out the gate.

Sounds like you might want to try out a lightweight FS eMTB (ie; Fuel EXE). Some of these are 60nm motors which may be suitable for your style of riding.

For me, and this mountain, a full fat is needed.

I'm pretty sure if you look on the Haibike website it will answer all these questions you have. If not there, look on the manufacturer website for your motor.
