MTB monster seem very good, I didn't end up buying from them in the end as there was delays in stock arriving (covid times) but having visited in person and speaking to them on the phone I only have good things to say about them.

You need to be in maximum efficency with your gearing. Making sure you use the larger gears more and keep the cadence around 80rpm, don't allow the motor to assist you as much because you're not using the most suitable gear for the speed/slope.
Honestly I think you've answered your own question, the handlebars are too far away so getting ones that can be upswept and angled towards you can help reduce the strain .
After degreasing the chain I blast it clean with an aerosol electrical cleaning solvent, seems to remove the degreaser and leave the chain dry ready for lubing.

Auto is my regular go to mode, it's absolutely ideal for trails and steep climbing. Ramps up the power when you need it and then nicely backs off. I find it much better than emtb.
So that's not normal. There's a rattle when descending downhill without pedalling, but if it develops a rattle then something isn't right.
Check your motor mount bolts, battery tray, the lock ring on the chainring.
