The black is far less prone to chipping than the coloured paint which is the main reason I went for black/ green as well. Just wait a few days to protect it.
I hadn't heard anything about that either but my headset (2019 Expert) loosened off recently. It tightens up using a 5 or 6mm allen at the bottom of the steerer. I will keep a close eye on it from now on.
I think this design is a very good idea as the ingress point is on the inner edge which is more shielded from mud than the outer, also the cover will spin with the ring gear as you pedal and sling mud off, away from the axle.

I think it looks quite bulky. If it rotated into the spokes (e.g. after a knock) then it would suffer pretty serious damage, and possibly lock the back wheel.
From what I have read torque and cadence are factors affecting power assist levels. These won't change. The speed influences how the motor switches off as you approach the limit, that should just be scaled up to the new speed limit of around 40kmh. Overall it should have no downsides.
Maxxis rate the WT tyres for 30-35mm rims and the 2019 Levo has 30mm width. I have the Minion DHF 2.5WT on both ends and they are fine. I measured them roughly at 2.5" on the nose.
However Maxxis now have some 2.6x29 tyres available so they might be an option for you.

I found there wasn't a lot of choice for matte finish frames like the 2019 Expert Green. I went with 'paragontapes' on Ebay which works quite well and isn't too noticeable except the edges.
Totally agree, vertical height and distance are the best indicators for new trails. You also need to factor in your weight and be honest about much pedalling effort you will be putting in.
