Ooohh errr…I too like a high stack height which is why at 6’ 2.5” (half does matter …he he) the 520 feels spot on and not too long by any means even with saddle down and in a more aggressive riding position.

Yes an offset bushing in the top eyelet and flip chip set low at the bottom (Yoke end).
This gives a pretty good overall geometry as above.
Static BB height a little higher maybe 350-352 however once you load it its fine. I find that with an eMTB if you want to both techincal/rocky...

Battery consumption depends hugely not just on elevation gain but how much involvement the motor has had in said gain. This depends on fitness, terrain and as you say settings.
Example: You use gently sloping fire roads to gain height where you can input most of the power and the motor tops up...
Most enduro style bikes are now designed with steep ST and for seat to be dropped a long way not ridden like XC bikes..that is the whole point of droppers to get the seat out of the way to allow freedom of movement. Only those bikes with very short ST may cause interference however I’d guess...
my s5 Kenevo came with a 150 dropper which for me at nearing 6’3” and 35 inseam was clearly not right.

When I want to ride a mountain bike I ride my mountain bike, mainly with my mates non of whom have a battery and motor.
when I want to do steep, technical climbs I use my full fat mullett Kenevo turbo which needs full power to get up the fun stuff I like to climb….then beat my times back down...
As above you may be struggling to move from a 26 to 29 front end. Also a longer, slacker and lower bike will feel less twitchy and less enthusiastic to be lobbed into tighter stuff.
29ers need to be ridden a little differently to get the best out of them. Think more carve than rooster in...
Have you set acceleration response to low or zero ? This can help with a more direct feel and less “touch and go” with cranks. This can help with more technical climbs I find as less peaks in torque or over run.
Which TCU and year ?
Ive upgraded my TCU (non mastermind on 2.1 2021 Motor) just done a quick 12 mile loop with steep climbs and good drops all fine….fingers crossed.
