Spare wheelset - Spectral:on 2019

I'm looking to get a spare set of wheels and as with all other bike components thus far, I'm back to learning all the jargon for wheels. And there is alot to learn as far as componentry and compatibility.

The bike is 29/27.5 Shimano XT Deore 11 speed cassette, but I'd like to change to SRAM for thumb-only shifting (leave my finger on the brake). So I need to get a mullet set of wheels with SRAM 11 speed cassette for a GX shifter...

Anyone else go through something like this, or find a mullet set that works well in general?

EDIT: wait, are you saying the switch operates both ways simultaneously?

EDIT: Holy S--t! The switch goes both ways. Oh thank you JD, I don't need to start swapping components. All I need is a bloody spare wheelset that works with Shimano XT.
