I've removed the stupid integrated headset and the knock block.
I don't see the cable twisting or breaking and I believe it was made not to tear the cable inside.
I believe I don't need it, but I want to hear from your experience - can I do it? any impact?

If you can turn your bars past 90 degrees without any issue on the fork crown or the levers hitting the frame, then there's no issue.

Usually 'because it's cheaper'

Trek on the Fuel range did it because the fork crowns hit the frame, so they put a rubber bumper there and a knock-block headset. Don' know why Orbea did it. My 23 Rise doesn't have it.
