So I'm not quite happy with my braking power, would like a bit more bite. My brakes are m520/510 shimano and I'm running sintered pads for the dirty winter. Are there any better bitey discs that are a direct fit on the 2019 stereo pro, or more like what's recommended for good bite.

Pad material will help to certain extent, caliper upgrades will make the most difference, but rotor (disc's) size will not make any substantial improvement in the "bite" or clamping force. The only thing a larger rotor does, besides look good, is dissipate heat better so you don't go past the thermal range of your pads.

I would start with pads, if you want more, then go with a nice set of quad-piston MT7's or other high quality brand.

I will say especially when you go larger, a 2-piece/floating rotor is definitely better than its 1-piece counterparts.
