Help me understand picking a coil size

I feel stupid, but something just isn't connecting for me..

I get I need to figure out what weight coil, but I'm having difficulty figuring out what coil. Like if I buy a Ohlins TTX22M.2 Coil Rear Shock in 230x65 what size coil do I buy? 67mm, 57mm?.. 75mm??

I'd assume it's the 67mm..

Yes, and basically, as long as the stroke of the spring is the same or greater than the shock, and it physically fits length wise on the shock body, then it’s good.

A 57mm spring would ‘bind’ (or compress fully) before the shock had gone through its 65mm of travel, in your example.
