If I’m watching on a 1080 res TV is there any point at all setting the GoPro to record at a higher res e.g. 2.7K or 4K?

If you’re likely to view your footage at any time in the future then shoot maximum resolution.

The only reasons to shoot lower resolution would be to reduce file sizes and render time for post production and to shoot at a higher framerate eg 60 or 120 fps for smoother action, slow motion or other fx depending which GoPro you have.
