The charger automatically switched off after fully charging the battery but a few hours later it clicked back on again and started charging the battery for another half an hour before switching off again.
is this normal?

Mine does this as well, I just assumed it was the battery draining a bit as it was sat doing nothing ??‍♀️

Haven't checked but assume it's a bit like a trickle charger set up (my motorcycle onedoes the same through the Winter period). As soon as a drop in voltage is seen by the software, it kicks in again. I know there is a battery firmware upgrade they do when they upgrade the 85nm stuff for the motor.
Still wouldn'teave it plugged in as a trickle charger though.

That seems to be typical of lipo charging. The charger detects the peak and stops, then the chemistry has time to stabalise and there is room for a bit more charge. It's better to take it off charge after the first peak. Some of the EV cars which also use 18650 batteries purposely charge to less than 100% to increase battery life. I don't know if emtb do the same.

There is not a lithium ion powered consumer product (EV, eMTB, drill motor, electric chainsaw, etc., etc, etc.) on the market that fully charges lithium ion batteries. 100% charge level is *always* set below the actual maximum charge of the battery. This is done to increase the useful life of the battery. The end user cannot generally even see this, it is kept simple for simple people.
