I'm guessing Specialized simply put the 2.5mm spacer/washer in there so both ends would be exactly 180mm. Not sure what the extra 2.5mm at the shock extrapolates to at the wheel, but I wouldn't think more than an extra 5mm.

I can tell you this from experience: The 3mm needs to be accounted for. Sram makes a spacer 'kit' with various sized individual spacers, and I tried using it to mix/match SRAM/Shimano years ago. It ended up being a clusterfuck. Never could get the pads to sit flush with the top of the rotor(s)...
You're gonna have a hard time riding on shimano rotors with SRAM brakes and vice versa. if you run max size rotors. Shimano runs 203mm rotors, while SRAM runs 200. And obviously their calipers are shaped differently, thus their adapters are clearanced differently as well.
