Terrain: some gnar, some jumps and drops (nothing massive like 2m to flat or anything similar).
No mud, all dry rides.

Today I've noticed something peculiar related to motor noise.
The motor would rattle between the 8th smaller cog (18t) and the smaller one (10t).
If I used the 7th (21t) or bigger cog, engine would be (almost) rattle free/ quiet.

I respect, but me being 87kg naked, and descending stuff as steap as you stated, if I was you, I'd revise and overhaul the brakes.
You might have a piston that is not fully rectracting, leading to pad/disk drag (somethimg I personally complain, but without any problems like you described)...
To balance such negative report, and because Internet attracts more negative comments than neutral/positive, I leave my comments from last 800km with this brakes on similar ebike:

Due to different situations:
Upshift - normally it'll be performed on high rpm/low torque conditions
Downshift - normally is performed on high torque (loads), and while climbing.
I supose the system is designed to shift...

You can have High Power both ways:
1) high load (torque) low rpm
2) low load (torque) high rpm
