Because 2259 is not a common value (2260 is much more common). Different manufacturers put different circumference during motor initialization. Also, only the new EP8 motor has the regulation log with stock value of the wheel circumference.

The App informs you about non-supported firmware, why don't you pay attention to it? Anyway, downgrade the firmware to the supported version and derestrict your bike. You can upgrade firmware back to the latest after derestriction
Only Shimano batteries have cycles statistic. Your bike has Simplo battery.

No. There is no such thing as the "custom tune". It's all marketing stuff ;) The EP8 RS has software torque and power limiters that can be modified without the Premium license.
It's not possible to downgrade the firmware using iPhone with the latest ETube App installed on it. So you can't derestrict the bike via Bluetooth. Get an android phone for downgrading or get Shimano PCE interface for derestriction without downgrading (Windows PC required)
