Your settings look good. VP09 is done by YouTube not the person uploading

Processing can take a fair bit of time depending on video length it can take 20 - 30mins for YouTube to reprocess your footage in to all the various resolutions for each viewing platform/device

When you started the video project before importing the video, did you specify a 4k project? Maybe the project was set to 1080? Either way keep at it, I find the whole capture and edit thing enjoyable. Those trails you are riding look fun, pretty well built too.
